First, you don't do a steak day until you are OVER your two pound limit. The limit is to allow for fluctuations, and thats what you were experiencing after day 1.
If you correct too early, it can get you into an uncontrollable correction cycle. You mention you've done steak dayS and modified steak dayS (emphasis on the plural) which means that is probably what has happened. Since you are 2/3 of the way through P3, the only thing you can do now is stop correcting and see where you end up at the end of the 21 days of P3. At that point, you can assess whether to raise your LIW going forward. But I think its worth giving your body some leeway to correct itself instead of bullying it lower prematurely.
