    mrsstrong's PI travelogue

    Why not? It helps me stay focused.

    Today was my first travel day and the first day of my PI. This morning I enjoyed a cup of yogurt, two eggs, two slices of bacon, and two almond flour biscotti (they are small!). That was a little bit of a shock to my system! Luckily it was early (6:30) and I had plenty of time to digest till noon.

    For lunch, I stopped at a rest stop near Pendleton and had a slice of Outer Aisle with lupin spread (no carb "hummus"), half an avocado, a slice of bacon, a meatball, a slice of goat cheese, and some Lily's chocolate.

    I should have brought a plate with me...

    I had a small snack on the way: half a biscotti (I cut them in half before the final baking) and some almond butter.

    I arrived in Twin Falls early evening and made myself dinner with some egg bites from Costco (no sugar as opposed to the Starbucks ones), an Outer Aisle slice with tuna salad, and 1/4 of avocado, some more chocolate. Still no plate. I think I saw a dollar store and will stop to get a plate tomorrow!

    I feel pretty satisfied with the foods I brought with me. The meatballs are just ok. Maybe they are better warm so I will try one for breakfast heated up in the microwave.
    Ate when I felt like it without worrying, ate simple, and not too much. I think. LOL Not counting and using this time to feel my cues.

    PI Day 2

    Travelled from Twin Falls to Bryce Canyon today, about 7 hours. It was a gorgeous drive with very dramatic weather (wet snow, then hail and thunder) and gorgeous views: wide-open sky, beautiful snow-covered mountain tops, rolling hills, and finally the red rock formations as you get closer to Bryce Canyon. I can't wait to hike tomorrow morning even it is going to be freezing cold (34 at 9 am).

    Breakfast was yogurt with keto granola (delicious!), 2 boiled eggs, and two slices of bacon. Went on a little hike for about an hour before hitting the road. It was cold! Treated myself to an Americano with an extra shot and one pump of sugar-free vanilla to warm up.

    Lunch was a slice of Outer Aisle with lupini dip and avocado slices, one with leftover tuna salad, a slice of goat cheese, 2 Duke's sausage sticks, and a biscotti.

    Dinner was meatballs (they really do taste a lo better heated up!) and shaved and roasted Brussel's sprouts. Some Lily's chocolate and a grissini for dessert. I love it that I can have these sugar-free treats! I don't crave more, and I am not munching on things in between meals.

    MrsStrong, Where did you find the lupini hummus? I’ve been wanting to try it but haven’t been able to find it. Their site says it is sold at Sprouts but the one near me doesn’t carry it. Do you like it? Does it taste like traditional hummus?

    I bought it on Amazon but had to take the plunge because they only sell it in packages of 4. I bought the garlic and rosemary. I have only had it on the Outer Aisle slices so there is a delicious mix of flavors, but it does come close to regular hummus to me. It is a little less creamy but not at all gritty.

    mrsstrong, love that you are doing your travelogue! So fun for us, and if it keeps you accountable, all the better! Sounds like you are eating well, certaibe nly sounds delicious. Keep it up, you'll come out of this planned interruption refreshed having gone on a fun trip, and having enjoyed wonderful, healthy eating. Be careful on those roads, wet snow, hail, and thunder? Be careful. Look forward to hearing from you. Post pics if you can, but ok if you don't, I don't know how to post pictures on here myself!

    PI Day 3

    Glorious day but I am exhausted! Eating still going well. After all, I am only eating what I brought

    Was blessed with the most beautiful sunset in the Grand Canyon this evening. Just so amazing. The whole drive from Bryce Canyon to the Grand Canyon is just incredible. Such amazing beauty. I am in Flagstaff now and plan on a hike in Walnut Canyon tomorrow.
