    Bri, how do you upload a pic? All I can figure out is to attach a photo. But it's too little, like a thumbnail size.
    Went from a size 20/22 to 16!

    Hi Diane,

    You'll need to put the image on a website somewhere and link to it (use it's URL) to get it to post/embed in these posts. So an account like flickr would let you do that. I have my own webserver at home so I just post them there and link to it.

    Zucchini Bread

    Ingredients:

    •Vegetable oil spray for greasing baking pan
    •1 cup soya powder (I used whey protein isolate)
    •1 cup almonds, finely ground
    •1 cup granular sugar substitute (I used 1 cup Xylitol)
    •1 1/2 teaspoons ground cinnamon
    •1/2 teaspoon nutmeg
    •1/2 teaspoon salt
    •1/2 teaspoon baking soda
    •1/2 teaspoon baking powder
    •1/2 cup vegetable oil
    •4 large eggs
    •1 medium zucchini, coarsely grated (about 1 1/2 cups)
    •1 teaspoon vanilla extract
    Directions:
    Preheat oven to 350 F. Grease an 8x 4 loaf pan generously with oil spray; set aside. In a large bowl whisk together bake mix, ground almonds, sugar substitute, cinnamon, nutmeg, salt, baking soda and baking powder. In a medium bowl, whish together oil, eggs, zucchini and vanilla extract. Mix zucchini mixture into dry ingredients until just combined. Pour batter into prepared pan. Bake 45 minutes until golden brown and a cake tester inserted in center comes out clean. Cool in pan for 10 minutes before removing loaf from pan. With a serrated knife, cut into 18 slices for serving.

    Protein: 5.0 grams
    Fat: 9.0 grams
    Calories: 115

    Veal in Lemon Caper sauce with Cheesy Cauliflower rice & Fresh tomatoes

    8 oz veal, sliced thin
    1 tsp coconut oil
    2 tbsp lemon juice
    1 tbsp capers
    1 tsp garlic, minced
    180 g cauliflower, riced
    2 tbsp butter
    1/2 tsp garlic salt
    1 tsp parsely flakes
    40 g parmesan cheese, shredded
    125 g roma tomatoes sliced (as a side)

    Pepper veal on both side, saute in coconut oil on medium heat. Remove from pan when done. In same pan, add lemon juice, garlic, and capers. Stir to incorporate any cooked bits from the veal. Reduce and pour sauce over veal.

    Pulse or grate cauliflower until it looks somewhat like rice. Place in a microwave safe dish with a lid and cook on high for 3 minutes. Do not add water, it does not need it. Heat butter, garlic salt, and parsley flakes until butter is melted. I do this in a small glass dish in the microwave. Stir butter mixture into cauliflower. Add parmesan cheese and stir this in also.

    Oooo bread looks great Diane!

    Pics don't have to be pretty, Beth. I'm just playing around with photoshop and having fun creative because I want to start a food/recipe/health blog and want some of my pics to be pretty in it.
