Veal in Lemon Caper sauce with Cheesy Cauliflower rice & Fresh tomatoes

    8 oz veal, sliced thin
    1 tsp coconut oil
    2 tbsp lemon juice
    1 tbsp capers
    1 tsp garlic, minced
    180 g cauliflower, riced
    2 tbsp butter
    1/2 tsp garlic salt
    1 tsp parsely flakes
    40 g parmesan cheese, shredded
125 g roma tomatoes sliced (as a side)

Pepper veal on both side, saute in coconut oil on medium heat. Remove from pan when done. In same pan, add lemon juice, garlic, and capers. Stir to incorporate any cooked bits from the veal. Reduce and pour sauce over veal.

Pulse or grate cauliflower until it looks somewhat like rice. Place in a microwave safe dish with a lid and cook on high for 3 minutes. Do not add water, it does not need it. Heat butter, garlic salt, and parsley flakes until butter is melted. I do this in a small glass dish in the microwave. Stir butter mixture into cauliflower. Add parmesan cheese and stir this in also.

But wow, that looks awfully tasty. May have to blog this recipe.

    OK, figured it out!

Not gourmet by a long shot (I can do gourmet, but I'm still starting slow on P3). But this was dinner. Herb crusted salmon with garlic-braised sugar snap peas. No recipe, just put seafood rub on the fish and saute the sugar snap peas with some garlic and MCT oil, throw in some water and steam 'til done.

    VLCD1: 8/12
    Round: Too many to count
    Phase: 2
Method: Switched to injections from drops on 9/7

    Goal for this round:

    Overall goal somewhere under 135...

Well seems I'm on a roll because I just couldn't resist putting together tonight's dinner too! Sorry no specific recipe here (I just made this up), but I did give all the ingredients in the image so you can make this to taste. Enjoy! PS. I know the overly-ripe avocado is making this salad look a bit "slimy" but darn is it ever tasty!

OOPS forgot to add to the list of ingredients: in each dish (the chicken & the dressing for salad), I also added just a touch of sesame oil and a few dashes of crushed red pepper flakes.

What did you think it was? Its an OMLETTE! Jeesh
Lightly sautee spinach about 2 cups in about 1/2 TBS of GHEE
add 1whole egg +4 whites beaten
Onion flakes (fresh onion sauteed with the spinach would be better but I'm out)
    Tad garlic powder
Cover let cook on LOW temp
when omlette can be safely flipped without breaking do so.
    Cook another minute or so.
sprinkle on 1/8 cup mozarella (again I would have preferred feta but I'm out)
    Fold in 1/2

Plate omlette in lettuce, topping is winkles tomato relish, (salsa like and spicey!) sprinkle with a little bit more mozarella.
