    grating your own is safer ... MOST (maybe not all) grated and powdered cheeses have potato starch as an ingredient.

    I have been grating all of my own mozzerella and other cheeses.... so I should have thought of that. Thank you so much!

    DoingThisForMe's recipe for Almond Flour Pancakes is great!! I don't have any sugar free syrup though... so I have been using Fage, Cream Cheese, and Strawberries. I will post a picture of the results below. So yummy! Thanks DoingThisForMe!



    Phase 3 Strawberry Topping

    1/4 Cup Fage Yogurt
    1 oz Cream Cheese
    5 or 6 Small Strawberries (I used Frozen unsweetened ones)
    1 Packet Truvia

    Whip the above items smooth in a blender or food processor. Top your pancakes with the mixture and add fresh sliced strawberries to the top. Yum!

    OMG both of my kids are Celiac (gluten free) and I just started P3 I divided the crust to make two smaller pizzas so I could have veggies on mine. It was to die for!!! Everyone came out of their bedrooms saying what smells so good!? We all loved it!!!!

Bake at 375 25 minutes or until evenly browned, but not too dark. Let cool completely on a wire rack. When nearly cooled, take a metal spatula and carefully pry up the edges to loosen from pan. Ease the spatula under the whole crust to loosen. Keep the crust in the pan. This makes it easier to remove the finished pizza later.

    Spread the pizza sauce, then the cheese and toppings of your choice. Lightly sprinkle with the seasonings of your choice. Bake at 375 about 15-20 minutes or until toppings are bubbly. Let stand a few minutes before cutting.

    Makes 8 servings
    Can be frozen

    Per Serving: 304 Calories; 25g Fat; 17g Protein; 3g Carbohydrate; 1g Dietary Fiber; 2g Net Carbs

    REVIEW: I really enjoyed this pizza and it was filling! My husband loved it so much he almost ate all of it himself!

    Made caulitots today. Thanks hellowmedina for telling me about these.
    Next time I make them I will try adding an egg or eggwhite to help hold them together while shaping into tot.
    But they were easy to make and a really nice snack/side dish.

    Made "Almond Joy" coconut ice cream tonight. I have no idea where I got this recipe so I can't give the proper credit. It might have come from here, a cookbook, a blog, facebook, or a low carb website. But kudos to whoever thought of it. It is delish and since it's ice cream weather, I thought I'd share.

    "ALMOND JOY" COCONUT ICE CREAM
    1 can full fat coconut milk
    1/2 cup unsweetened cocoa powder
    6 tbl Splenda/stevia/sweetener of choice
    1 tsp vanilla
    1/4 cup toasted unsweetened coconut and a few chopped almonds

    Add first 4 ingredients to bowl and mix well with a whisk. This can then be poured into an ice cream machine but I just poured it into a container with a lid and put it in the freezer. After about 1/2 hour I sprinkled the toasted coconut and chopped almonds on top and put back in the freezer to continue freezing.

    edited to add - this freezes super hard if you don't use an ice cream machine so you need to take it out to thaw and soften before serving. I put the leftovers in the frig instead of back in the freezer and it stay the consistency of soft serve ice cream. It is really delicious. I'm going to experiment with some other flavors, like creamsicle.
