    I got my baking blend today and used it to stretch the oat flour in an eggless waffle for dinner. It came out yummy. I'm going to start trying some of the book recipes that call for it soon.

    Woke up around 1am and couldn't get back to sleep right away so I grabbed my ipad to read some in the old thm book. They talk about not getting stuck in the E breakfast mode. I have only been eating 1 S breakfast a week. So I decided to mix it up a bit. I ended up fixing the chocolate lava(or whatever it is called) muffin in a mug for breakfast this morning. My mind being preoccupied right now, I forgot to add the sweetener. LOL. Fixed that by thawing a few strawberries and adding the sweetener to them and then dumping into the muffin and mixing it up a bit. Was darn good! Had a couple of slices of turkey bacon to up the protein and added extra collagen to my coffee. Very enjoyable breakfast especially since I was able to have my coffee with HWC! YUM!

    Coffee with cream all the way! There really is no equal substitute.

    Your muffin sounds yummy. I've been tending to alternate between S & E breakfasts. I find that when I have an E dinner, I'm wanting the S breakfast the next day. My S breakfast is usually a warm chia pudding with blueberries and sunflower seeds.

    Scale dropped .6 today. Thats a nice chunk, and makes me feel a little better. I think my sourdough starter has finally come to life enough that I can probably bake tomorrow. I've named him Ted. Anything you have to feed everyday is a pet, so I figured he needed a name. I found a nice place for him to happily bubble away on my kitchen radiator. Since we have hot water heat, the radiators never get super hot, and a pan dissipates the heat just enough to keep the starter bowl toasty warm without cooking it.

    It has been a fun experiment. After about 4 days, I saw some signs of life and in the last few days a lot more, and the starter has a beautiful fruity/yeasty aroma. I think that tip about changing the starter to a new sterilized bowl everyday is the key. It keeps bad things from growing and lets the wild yeast propogate without competition.

    I am looking forward to hearing how your bread will turn out when it is time, Leez I am looking forward to trying some of the okra recipes but I can't find any where I am right now. I spend part of the summer in Greece and we grew it last year. I wasn't a big fan however as the Greek's cook the H. out of all veggies. LOL.

    I am not weighing myself for a month or I would likely quit if I saw up and down!

    S breakfast for me today, scrambled eggs, some Italian sausage (hard to find without sugar and excess crap), onions and leftover broccoli. Going to have an E lunch. Well it will be more like afternoon as I ate late today.

    Great you had a drop today. I know in the book they caution about worrying too much about the scale. Totally opposite what we have learned from doing the hcg diet so it is hard not to be concerned with gains.

    Cool about Ted coming to life. Interested in how he does as I have never made sourdough bread. I really am pretty happy without bread in my life so haven't even tried any of the many recipes in the book. But thought I would try the silver hills one when i saw it in Aldis. its still sitting there unopened. My husband says "never really liked bread" so he is fine too. He is doing so well and really trying to do 100% THM. I do like that focaccia style flax bread recipe that I found on here a couple of years ago but haven't even bothered to cook it in a while.

    I read that about not weighing daily too. Its a hard thing to let go of when you've done it for so long, and if you stop, you would lose that diagostic tool that tells you something was not right about what you ate yesterday. But then, if you can't really do anything about it anyway except continue on plan, then that tool has a lot less value. I haven't found any way yet of arranging or manipulating meals that would help me lose a big overnight gain.

    I wonder if it would be a good idea to soak my flour for the bread, or if it would interfere with Ted doing "his thing".

    I was thumbing through the cookbook today looking for something I could make with the baking mix that doesn't use eggs, and I came across the Zapple Crumble (p.337) It was a really good as a warm dessert after my S lunch salad. I think when I make it again, I'll increase the lemon juice and spice. I love that it tastes like dessert, but you are eating a vegetable. Now I have a great faux-fruit for an S meal. I think you could easily bake that crumble on stewed rhubarb too. I think I'm going to have a problem not picking at it the rest of the day. Note to self: Get some ramekins and bake in individual portions next time.

    I think if you used a big zucchini, and removed the seed pith, it would even look like sliced up apples and would probably fool people.

    Im going to have to breakdown and buy the thm cookbook. Cant do the recioes when im traveling but excited to try some new things when we get home in march . The oatflour waffle sounds good

    The waffle is something I found online and adapted it to the THM rules.

    Here is the original with my tweaks: Makes 1 dinner plate sized waffle for an E (starch) meal

    1 C. rolled oats, ground into flour (I used 1/3C oats + 1/4 C. baking blend + 1 T. oat fiber)
    1/2 banana, sliced
    2/3 C. water
    1 T. sugar or equivalent sweetener (I omitted this as the banana is plenty sweet)
    vanilla
    1/2 tsp pink salt
    1/2 tsp. baking powder
    Blend into batter. Let batter set while waffle iron heats up. Batter will thicken. They aren't crisp because there is no fat added, but they are still very good.


    Berry compote. Microwave:
    1 C. mixed frozen berries
    1/4 C. water
    pinch pink salt
    glucomannan sprinkled on to thicken after cooking

    Sounds good Lees. I have not ventured to do any baking. I used to make oatmeal pancakes with egg whites and protein powder. They were not very good. LOL. Yours sound much better. I think when food tastes delicious we it makes sticking to our healthy eating so much easier.

    Ted (my sourdough starter) is off on his first adventure today! I mixed up a loaf of bread this morning that, if all goes well and Ted has enough muscle, will be read to bake tonight. So far, there seems to be some expansion, so its looking hopeful.

    I found a THM blogger who devises egg-free recipes. I tried one for an S bread that doesn't use eggs and had it for lunch today with a big S salad: http://anointedwithoilofjoy.blogspot...d-oh-have.html They came out well. Not exactly bready, but with the same kind of chewyness a good roll has. I ate way too many, but I think it just felt that way since they are primarily oat fiber. I actually only consumed about 3 T of a mix of coconut and almond flour total, so I think I'm good. My protein was some tuna and some gelatin in my coffee.

    So yay! Finally a bread I can eat with an S meal! None of the allowed low-carb breads or wraps work for me because of their ingredients, so I'm pretty jazzed to have found this.

    Crossing my fingers that Ted comes through for you!

    Well, we had blt frittata on Monday and probably will not have that again. Just way too much cheese for me. So much that my nose started running half way through dinner.
    Had crispy salmon siesta on Tuesday. It was yummy and just so easy to make!
    Tonight was cab and sausage skillet. Another really easy meal and DH and I both loved it! Also had cottage berry whip tonight for dessert. It has become a favorite of ours.

    Looking forward to radishtoes tomorrow.

    I haven't lost any more weight but am loving this way of eating! DH has lost 2 more pounds since Jan 1. He is so excited and wants to start taking ggms to work. He says the more he drinks the more he loses so I need to start making it by the gallon instead of half gallon. Our favorite tea to put in it so far is cinnamon apple spice.

    Oh, DH took my cookbook back to Office Depot. Got an apology and a new book. Barnes and noble is charging full price for that book at their B&M stores. Crazy since it is only about $17 on their website. Also got the new one spiral bound and laminated for free and a refund on the first spiral and lamination. Plus they told him to take both books. May give the first one to my sister. She isn't on thm but has listened to me and had made some small changes to her diet.

    Great report on your cookbook replacement. I'm glad somebody did the right thing for you.

    Ted was slow and steady in rising my loaf yesterday..but the operative word there was slow. He should have been done by late evening, but was still an inch from the top of the pan by the time I went to bed. I had read that sourdoughs can take up to 18 hours to rise, so I figured it probably would be ready by morning. Unfortunately, sometime during the night, Ted peaked, and what I found was a collapsed loaf this morning when I came down to make coffee.

    When the dough collapses, it means the little organisms have run out of food, so I just gave him a little feeding, and worked it in with another kneading cycle and we are starting over today. I'm not sure if the second rising will work, since the book recipe only called for one, but it's worth a try. I have the bread pan wrapped in a fuzzy scarf on my kitchen radiator. There is a beauty-supply shower cap domed over it creating a little greenhouse for Ted to grow in. It looks hilarious, but hopefully, the extra warmth will get me a quicker rise today, if I get one. If not, then it's back to square one and I'll start feeding the starter again.

    I seem to be bouncing up or down a couple of ounces each day this past week within about a pound range. I sure hope this isn't my new "normal". I'm trying to just stay on plan and see where it all takes me if I keep doing it right.

    Too funny about Ted, I hope the green house effect will be the magic he needs! LOL.

    Glad to hear they got you a new cookbook Ginger!

    I am plugging a long. I sill mix things up a bit! LOL. I am currently reading a book called Always Hungry about a doctor who studied weight loss. His program looks similar to THM and I am not very far into the book. He sure explains why diets don't work well. Like when we cut calories and have restrictive diets that our metabolism actually slows down and wants us to hang on to that fat. Also that all calories are not the same. I knew this but he has a good way of explaining it. Makes me see why HCG works so well. I wonder if he ever researched HCG? Anyway he says: Eat fat to lose fat!
