    I haven't found any of the baked recipes really great---but that's probably because I have to sub out the eggs, and the results aren't generally that good when you do that. So I'll let the others list their favorites for you.

    The ingredient I find most useful is glucomannan. So useful for thickening gravies, compotes and making your shakes silky smooth without adding any carbs or calories. Defatted peanut powder is worth the investment too. I use that a lot in smoothies, and instead of peanut butter in E meals.

    Holding my vacation losses today and celebrating with crockpot oats, apples & nutmeg for breakfast. I love doing steel cut oats in a water bath in the slow cooker. They come out super creamy because I don't put salt in them until serving time--a trick I learned from Alton Brown years ago.

    abs: at least your weight came back down. That's as great a victory as losing in my book.

    I've probably said this somewhere on this board before, but I determined that I don't eat for other people anymore. After investing all this time and effort to get healthy, it seems only logical to do what is needed to keep my body functioning properly. Since making that decision, I've found that for the most part, people don't really care, and if they do, its more about wanting to help you get what you need. There is always a way to make it work without putting any pressure on a host to have something separate cooked for you. I eat the parts I can, and supplement with stuff I bring along or pick up while there.

    Interestingly, in the house where I was staying, everyone was attacked by a pollen cloud from the currently blooming whatever in Florida and much sneezing, sniffling and antihistamine therapy was the order of the week. Except for me. I was the only unaffected person. Thinking about it, I haven't even had a cold in over 4 years. I think that says something about consistent healthy eating. (Or maybe it's the massive amounts of vitaminC I take every day. ^_^ )


    For the slow cooker oats: Single serving:
    1/4 C. steel cut oats
    1C. unsweetened almond or cashew milk
    1/4 C. water (more if you like it thinner)
    nutmeg
    vanilla
    apple or peach chunks, or a handful of cranberries

    Family serving: 1 C oats to 1 quart almond milk plus 1 C. water

    Make sure the water comes up around the bowl to the level of the oats inside.

    I bet you convert her to the slow cooker method if she doesn't already do that.

    Forgot to mention, when I use only cranberries, I like to slice half a banana on top and add a little extra nut milk. So yummy.

    Up a half pound today, but had an E snack last night around 9:30, so I'm thinking it likely just hasn't passed through yet. I usually don't eat a late snack, but I had an early dinner instead of an afternoon snack, so pushed the snack to evening. I'm not especially worried about it.

    Hope everyone is having a great eating day. Starting mine off with an oat waffle and some pineapple and cherry compote. And, of course, some yummy coffee. Always a morning requirement!

    Leez, do you put anything in your coffee when you're having an E breakfast?

    And that pineapple-cherry compote sounds delish! What kind of sweetener did you add? Do you grind your own oat flour from oatmeal in a blender?

    Yes Leez you always make such yummy things. What do you use for the oatmeal waffle? I do use truvia for sweeteners. I used to only use sweet leaf stevia but i prefer the sweetness of truvia which has the stevia plus erythitol.

    Holding today. I use a little half and half in my coffee. Just enough to make it a dark caramel color and smooth out the flavor. I estimate it to be between 1-2 tsp for a cup. I seldom use more than 2 oz in a day, so I don't bother with substitutes. 2 T. of half & half is only 3 gms fat and .5 gram carb, so I get 4-6 cups of coffee out of that. I think it is fine even with E breakfasts. The oat waffle only has about 2 grams fat in a half cup of oats, so there is some wiggle room there for multiple cups of coffee.

    Oat waffle: Yes, I put regular oats in a coffee grinder to make flour. Oddly, the measurement is the same, so 1/4 C. oats makes 1/4 C oat flour.

    I usually use xylitol, but this waffle doesn't really need any added sweetener. I'm trying to get up the courage to try Pyure from Walmart (similar to Truvia but maybe a little sweeter?) because its non GMO, but the erythritol in it is still from corn, so that will be a gamble.

    Here's the recipe, tweaked to keep carbs a little lower without making a smaller waffle (this makes about a 7 inch one) and I can pile on the fruit and greek yogurt without going over 45 carbs. :

    1/4 C. oat flour
    1/4 C. oat fiber
    2 T. whole psyllium husks or 1 scoop collagen powder
    1/2 a banana (or 1/2 C either pumpkin or cooked butternut squash for even lower carbs)
    1 tsp. baking powder
    1/2 tsp. pink salt
    vanilla
    1/2 C. water

    I mix with a stick blender. Batter should be stiff enough that you have to spread it out some on the waffle iron. I give mine a short spritz of non-stick olive oil spray once the iron is hot. The waffle will not stick if you wait until all the steam has stopped escaping before lifting the top of the iron.

    If you don't have the special ingredients (oat fiber, psyllium, collagen) just use a 1/2 C. oat flour total. You'll still be around 25 carb grams for the oats. That was actually the original eggless recipe I found anyway. Easy to remember: everything is a half something. The original didn't call for baking powder, but I think it helps. (I imagine that if you can use eggs, you could backward-engineer this and use one instead of the banana.)

    I don't think it needs any sweetener, but you could certainly add some if you like.

    I don't sweeten my compotes either. For the pineapple cherry one, I dump a can of pineapple tidbits in their own juice in a microwave bowl and add some frozen cherries. Once its hot, I sprinkle and stir in some gluccomannan to thicken. A little pink salt helps bring out the natural sweetness. If I'm doing frozen berries or other fruit, I just add some water before heating for the sauce. I find it plenty sweet on its own.

    Last day before my east coast trip, so running around like a madwoman to get ready.

    I've managed to keep off 2 of 3 pounds lost last trip, and this one is 2 weeks long. Maybe I'll lose 6 this time! JK...I'll be happy to stay even. But we'll see what happens.

    Enjoying probably my last peaceful breakfast at home today--creamy crockpot steel cut oats with apple and blueberry. So yummy. Everytime I have it, I thank God I can eat oats without fear of gaining.
