    I'm right there with you on the latte...although I've been easing into it with almond milk and just more creamer in my coffee but i'm getting there! As for cheese, it really was never all that important to me until I started this diet but now it is literally my favorite thing in P3. One thing I have definitely found to be true in P3 is that not all dairy items are equal. Most of you probably already knew that though.

    My almond meal crusted pork and green bean side was delicious last night! Someone mentioned it a few pages back about green beans and they are ok for P3 but definitely an item you want to watch. I do just fine with them and they are one of my favorite veggies as I leave them very firm so the crispness is nice.

    I haven't figured out my protein yet for tonight, but I'm doing brussel sprouts with shallots and prosciutto cooked in oh so delicious butter. Thinking salmon on the protein side. Having my same dinner last night for lunch today but remixing it into a salad with kalamata olives and feta cheese and brianna's real french vinaigrette which I highly recommend for P3 (no sugars). I actually do that with just about every meal in P3...I make more than I need and remix it the next day for lunch for my wife and I.

    Down .4 today....exactly on LIW.

    Fatty - OMG I almost totally forgot about that! Thanks for reminding me I will buy a block of cheese to shred (gonna have to dig out the cheese grater...god only knows where hubby hid it LOL!)

    Can we have skim milk on P3??? I thought it had too much sugar... We'll have to see. When I did the atkins diet ages ago I drank breve lattes from starbucks and they didn't bother me. But that was a long time ago, and I think my lactose sensitivity has happened since then... I wonder if I can have lactaid or if that has sugar in it?

    And Swabby - thanks for the milk alternatives! I will have to try it and see how it goes down

    STACEY'S PEANUT BUTTER CAKE
    6 tablespoons unsalted butter, softened (do not use salted butter)
    1 large egg
    1/4 cup plus 2 tablespoons natural peanut butter
    1 cup granular Splenda or equivalent liquid Splenda
    1 1/2 teaspoons vanilla extract
    1/2 cup plus 2 tablespoons Carb Countdown 2% milk *
    1 cup Carbquik
    1 teaspoon baking powder

    Glaze:
    1 ounce MiniCarb chocolate chips, scant 1/4 cup
    1 tablespoon butter
    1/4 cup heavy cream
    1/4 cup granular Splenda or equivalent liquid Splenda

    Preheat the oven to 350. Grease and flour a 6-cup bundt pan or 8x8" pan with Carbquik. Cream the butter with an electric mixer. Add the egg and mix until smooth. Mix in the peanut butter and combine until fully incorporated. Mix the Sweetzfree, vanilla and milk; set aside. Mix the baking powder into the Carbquik.
    Add the dry ingredients and milk mixture to the butter a little at a time beating after each addition. When the batter is mixed well, spread in the pan. Bake 20-25 minutes or until a toothpick inserted in the center comes out clean and the cake is golden brown. Cool on a rack before putting on the glaze.
    Glaze: In a small bowl combine the chocolate chips, butter, heavy cream and Sweetzfree. Microwave on MEDIUM for 30 seconds or until the butter is melted. Stir to completely melt the chocolate. Place the bowl in the refrigerator and stir every once in a while until it's thick enough to pour over the cake without running off too quickly.
    Makes 6-9 servings
    Can be frozen

    * Or, you can use half heavy cream and half water.
    With granular Splenda:
    Per 1/6 Recipe: 366 Calories; 31g Fat; 10g Protein; 21g Carbohydrate; 10g Dietary Fiber; 11g Net Carbs

    With liquid Splenda:
    Per 1/6 Recipe: 346 Calories; 31g Fat; 10g Protein; 16g Carbohydrate; 10g Dietary Fiber; 6g Net Carbs

    With granular Splenda:
    Per 1/9 Recipe: 244 Calories; 21g Fat; 7g Protein; 14g Carbohydrate; 7g Dietary Fiber; 7g Net Carbs

    With liquid Splenda:

    Hi everyone. I've missed you! My life has been turned upside down. I have to vent so I'll apologize in advance.

    I think some of you may remember that my daughter was sick last week and I ended up having to purchase a nebulizer for her.

    She was out of preschool on Friday and was sick with 103+ temperatures for 3 days. Finally on Monday she woke up with a 100 degree temp which is not a fever according to her pediatrician. She still had a cough and she looked sick. Her eyes looked sick, she was lethargic and she hasn't really eaten anything in about 3 days. I bring her to preschool on Tuesday because she had no temp and wanted to go. (She was no longer contagious). As I walk in the door to her school, the owner walks up to me and says she has something for me and that she should have called me yesterday but it was so chaotic. She then hands me a letter dated for Sunday (it's now Tuesday) that one of my daughters teachers is in the hospital with a confirmed diagnosis of streptococcal bacterial meningitis. ... My 3 year old has been sick since Thursday evening, very sick.. her school knows this... they get a confirmed case of this meningitis and they don't call me immediately??!! I'm SOOOOOO PISSED OFF. Now I have some freaking $300 compounded medication that I have to administer to Cara in case she has meningitis. If she remains sick they have to do a spinal tap to test for it.

    Not to mention I cannot be exposed to these things and not be told. My immune system sucks and I catch everything..

    Wow, I would be livid. She had a responsibility to let you know that as soon as she knew especially since she knew your child was out sick. I really hope your daughter does not have it and that she doesn't have to go through a spinal tap.

    Holy ****!! I was wondering where you've been, hoping everything was OK, which obviously it was not! Your poor little girl! And wow, total screw up on the school's part for not notifying you! I'd be asking for some free daycare to offset the medication costs! Hugs to you!!!!

    I am so sorry about your daughter. I hope she feels better soon. One thing that helps boost my immune system tremendously is vitamin D3 and lots of it. Dr. Mercola swears by it. Especially during the winter months when you and your children are not getting enough sun rays.

    I never get a cold since I've been taking lots of it. (knock on wood).

    Sorry I should have specified... I hold off on milk until P4. It does have a lot of sugars, but supposedly the fact that they are natural is supposed to offset them or something. I haven't had it explained in a way I understand yet, so I just stay away...

    Grating cheese sucks big time. I absolutely HATE doing it, but LOVE the results!
