    I use 1/2 a head of cauliflower, one egg and 1/4-1/2 c grated cheese. It's all in what flavor you are looking for. I bake mine on parchment paper so it doesn't stick to my pans which i did the first time but you MUST oil the pan or paper, either way or it will stick big time! 450 degrees for 10-15 min or until it starts to brown on the edges.

    Chocolate Mousse Frosting
    (or just chocolate mousse)
     1 can coconut milk
     1/4 cup plus 1 T cocoa powder
     1/2 tsp pure vanilla extract
     sweetener to taste (I used a little stevia, but any dry sweetener will do.)
    Open the coconut milk, and leave the can (or transfer to a bowl) uncovered in the fridge overnight. (Donít shake the can before opening.) It should get very, very thick. (If it doesnít, youíve gotten a bad can that wonít work for the recipe. I highly recommend Thai Kitchen, or especially Thai Kitchen Organic.) Once thick, transfer to a bowl (you can opt to leave out the watery bit at the bottom of the can, if you want it even thicker) and whip in your cocoa, vanilla, and sweetener with a fork, or even beaters if you want to be fancy. (For the photos on this page, I didnít use beaters. But I did pipe the mousse out using an icing tip.) Stored uncovered in the fridge, the mixture gets even thicker.

    Then pair it with this simple low cal oopsie roll in layers.


    Oopsie Rolls (Gluten-Free Buns)
    3 large eggs
    pinch of cream of tartar (1/8 tsp)
    3 ounces cream cheese (Do not soften)
    Preheat oven to 300 degrees F.
    Separate the eggs and add cream cheese to the yolks. Use a mixer to combine the ingredients together. In a separate bowl, whip egg whites and cream of tartar until stiff (if youíre using the same mixer, mix the whites first and then the yolk mixture). Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites. Spray a cookie sheet with non-stick spray and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly.
    Bake about 30 minutes (You want them slightly softer, not crumbly). Let cool on the sheet for a few minutes, and then remove to a rack and allow them to cool. Store in a loosely open sack and allow to rest on the counter before use (otherwise they might be too moist). Can be frozen.
    Notes: If you are making these to be savory (for burgers) you can add dry mustard and dill or other seasonings to the yolk mixture. If you want a more sweet roll, add a very small amount of stevia natural sweetener to the yolk mixture.
    Makes 6 Induction Friendly, Gluten-Free rolls.
    Nutritional information per roll: Calories:85 , Carbohydrates: .6 g, Fiber: 0g, Net Carbohydrates: .6g, Protein: 4g, Fat: 7.5


    Then top with whipped cream, OMG!

Had I only stepped on a scale when I got to 210 I really don't think I would have ever gotten to 243. I was in denial.
    This is interesting information and I will keep it in mind. I think I read something similar before.

    I will weigh myself every day or every couple days from now on. My biggest gains have come during times when I don't have a scale, avoid the scale, or don't have a full length mirror that I use every day when dressing. Not going down that road again.
