    Crustless, Cheeseless Quiche for P2!! :)

    Hey veggie friends!

    I just made dinner and thought I HAD to share the recipe, b/c it came out FABULOUS! This is of course only for those who are eating eggs on the diet.

    Crustless, Cheeseless, Spinach Quiche
    Ingredients:
    1 egg, 3 egg whites (I used 1 whole egg and the liquid eggwhites mainly because I suck at separating!)
    Onion powder
    Garlic Powder
    Sea Salt
    Pepper
    Spinach
    Muffin tin

    Instructions:
    1. Preheat oven to 350F
    2. Mix/beat eggs and add onion powder (I put 2 tablespoons to equate 1 onion since spinach was my veggie)
    3. Add garlic powder, salt, and pepper to taste (don't actually taste the raw egg mixture )
    4. Add thawed, cooked spinach and mix (I used about half of the allotted amount for my meal and just prepared seasoned cooked spinach with the rest of it to eat with my quiches)
    5. Pour mixture into muffin tin (I used 4 slots)
    6. Bake until egg sets (for about 25-30 minutes)
    7. Let cool for about 10 minutes before eating

    makes: 1 protein/1 vegetable

    ENJOY!! (and they LOOK appetizing)
    PS I think I attached a picture successfully. I kept mine in a little too long. I would suggest 20-25, but it also depends on how you like it..

    Thank you for sharing! I'm struggling to find P2 friendly meal options. I came edit to try this! Are you making these in a muffin tin? So four mini quiche is the serving? Thanks!

    I made mine in a muffin tin since the amount of eggs used wouldn't really make much of a quiche in a large pan (and it's easier to think of eating 4 muffins than an entire pan of quiche). Technically, the serving is 4 eggs so whatever your egg + spinach batter fits into. I couldve made 5, but I just put extra in the 4 I had made.
