    Vegetarian Recipes

    Hello everyone,

    I am on R2 P2 starting tomorrow. Planning to do it vegetarian this time. Been on non veg in R1 but I am so sick of meat.
    Looking for some help with vegetarian recipes. Please share in some great recipes. I bought the Jillian Michaels protein powder.
    Is that good to use during this diet? Are fat free cottage cheese and egg whites allowed in P2?
    Any advice/ suggestions are most welcome.

    Looking forward to some delicious recipes from you all out there.. Keep losing and reach ure goals.. Thanks in advance!!

    Not everything I'm about to link to is going to conform to the diet but you're going to have to choose the best fits for you. I really understand your situation and for variety in the vegetarian food I consume I used this website:

    I signed up for their mailing list after watching the vid. I find Caribbean vegetarian dished to be a lot more flavorful than my usual meals. Hope it helps.

    Hi, I'm just new here and happy to join here.

    There's a lot of vegetarian recipes out there. But, won't you try this one:

    Rotini with White Beans and Escarole

    Ingredients

    8 ounces uncooked rotini
    2 tablespoons extra-virgin olive oil $
    8 garlic cloves, thinly sliced
    1/2 teaspoon crushed red pepper
    1 (12-ounce) bag chopped escarole
    3/4 cup organic vegetable broth
    1 (15-ounce) can no-salt-added cannellini beans, rinsed and drained
    1/2 teaspoon salt
    1/4 cup (1 ounce) shaved Parmigiano-Reggiano cheese
    Preparation

    1. Cook pasta according to package directions, omitting salt and fat; drain.
    2. Heat a large nonstick skillet over medium-high heat. Add oil to pan, and swirl to coat. Add garlic and red pepper; cook for 45 seconds or until garlic begins to brown, stirring constantly. Add escarole; cook 1 minute or until escarole begins to wilt. Add broth; bring to a boil. Reduce heat to medium; cook for 5 minutes or until escarole is tender and liquid nearly evaporates. Stir in pasta, beans, and salt. Top with cheese.

    Miso-roasted aubergine steaks with sweet potato

    Heat oven to 180C/160C fan/gas 4. Peel the aubergine with a potato peeler and roughly spread the miso paste all over it – the best way to do this is with the back of a spoon.
    Put it in a roasting tin along with the sweet potato wedges. Pour 225ml boiling water into the base of the tin, then add the oil, ginger and garlic. Sprinkle a pinch of salt over the wedges and place in the oven.
    After 30 mins, pour another 125ml boiling water into the base of the tin and roast for another 20 mins. Repeat, adding 50ml boiling water and the spring onions, and roast for 10 mins more. Check the aubergine is cooked by inserting a knife in the centre – if it is ready it will easily slide in and out, and the aubergine will be soft on the inside.
    Sprinkle the chopped parsley over the potato wedges, slice the aubergine into 2cm thick ‘steaks’ and serve on top of the potatoes. If there is no sauce in the bottom of the tin, add 3 tbsp water to loosen up the miso, then pour the miso gravy over the aubergine steaks and sprinkle with cracked black pepper.

    Okay, now I am depressed and bummed out. Somehow overnight I gained 1.4 lbs back. So let's see, yesterday I eliminated the vitamins and the lotion and only added the deli meat but I also didn't do my lightweight exercising. So maybe I will not eat the deli meat again if that was the cause! We will see.
    Last night we had spaghettiless meat sauce, one of my favorites. Mike made enough for my lunch today -but I forgot it! So I will have to go out and get something to eat because I have nothing here. I will have to look online for the vegetarian recipe/meal because I can't trust that any chicken or beef I get will be right. Steamed shrimp maybe with no oils added. I will have to see.
    Mike did lose more weight more than a pound. So he is good -even after eating the deli meat! So at least he is on his way.
    I am just depressed that first I only lost .2, then .8 and now gained. Wonder what is going on! I am at work again this week - worked from home last week - so maybe that will give me more exercise in the light sense that it. I hoping for a major loss tomorrow so that I will be back on track!

    Hi. I can advise to eat cabbage (broccoli or cauliflower) baked or boiled. My favourite veg recipe is baked broccoli, potato and carrot mixed with a 3 table spoons of soya sauce. Thatís the best low-fat dinner!

    Eggs work fine but don't take cheese. Try avoid saturated fats from your diet.
