I started with a short round and opted to keep going with a long round with tremendous success. I'm sticking to P3 for 8 weeks as it's pretty much how I have come to eat for thyroid health per doctor's orders. I may reintroduce legumes and maybe rice for hoppin' John, my fave New Year's tradition. But we'll see.
I'm a native Texan and spent lots of time camping in Oklahoma as a girl! So funny that you consider yourself located in the Midwest; I always thought of that area as the south. But it is somewhere in its own territory, really, with cultural traditions from the south, respective native peoples, as well as the Midwest.
Anyway, I love reading about your food. You're so creative with your P2 meals. I'm going to start taking notes for my next round mid January!
