    Will do, but like you not going to experiment much in P3.... I have two weeks before cycling back to P2, and I still have some of those Chocolate Cheesecake in the freezer, But I want to try it without chocolate and maybe using Protein Powder instead of the Cacao
    The one thing I did last weekend for my friend (with the brain tumor - surgery is tomorrow!!!) who is also diabetic... So I wanted to take something that she could eat and we have something called a Milk tart (it is similar to a custard tart but very Simple) Contains very little flour and Cornstarch which I replaced with almond flour and Xantham Gum - the rest is milk sweetener and eggs.. I could have made the crust with almond Flour but I cheated and did a biscuit crumb Crust with Sugar free Biscuits and it turned out well...

    for sweets, I mainly do fatbombs. I mix them up, then put into candy molds and freeze. My recipe for chocolate peanut butter cheesecake fat bombs is below

    8oz cream cheese
    1/4 cup marscipone
    1 stick salted butter
    1/4 cup natural peanut butter
    1/3 cup swerve confectioners sugar
    2tbs vanilla extract
    2 tablespoons cacao

    leave cream cheese and marscipone on counter to soften. Melt stick of butter, mix with sugar to dissolve. In a bowl mix all ingredients until well blended. Transfer to small candy molds and freeze. Move to closed storage container and keep in freezer.

    I also add no sugar added chocolate chips to this.

    MissM, sounds like you are a foody. Me too. It is a blessing and a curse. In reading Weight Loss Apocalypse, one thing I was really wondering is where the enjoyment of food balances in on this whole deal. If we are to confront our eating habits, are we to confront the pleasure we take in food? Is it good or bad to love food? I don't know the answer. I am sure we need to find balance somewhere. I don't think it is realistic for us to disconnect from the pleasure and enjoyment of food to simply view it as fuel. That said, I love to cook and am looking forward to opening up my menu.

    The inquiry of your last paragraph is basically my guiding question in a nutshell for this P3. How do we love and enjoy food while also tuning in to our genuine hunger that perhaps in the past has been blurred by enthusiasm if not passion? How can we change habits and behaviors in a way that is truer to who we are or who we're becoming rather than staying committed to conventional wisdom and established norms like meal and snack times? Can food be a major pleasure of life--perhaps even more so once we figure out how to stop overdoing it--without being an obsession or even MainStage entertainment?

    Knowing that food is most pleasurable when eaten while genuinely hungry and only to satisfaction, I want to believe that through this process we can honor all parts of our foodie selves to the max while also becoming healthier--physically and emotionally. All we can do is experiment and stay curious and share what we observe and learn with the intention of helping each other.

    there was an interview of a popular Houston chef a while back. The interviewer asked him how he stayed thin. He replied "I taste everything, eat nothing". hmmm

    Reminds me of interview someone had with a supermodel--she said her mother told her to take a bite of something she craved, but spit it out, after tasting. Ain't doin that, just sayin. I guess I best not taste at all.
