Thread: Homemade Chicken Broth

    So I read in the 101 Worry Free HCG Diet Recipes how to make chicken broth......does this count toward your calorie intake? Can you have it in addition to your protein and veggie?

    Most people don't count it, and yes, you have it in addition to your protein and veggie. I use Emeril's Chicken Stock, which is fat free and has 10 calories per cup. I use a cup of that, and add another cup of water to make my bowl of soup. When making your own, you've got to be diligent about getting all of the fat out of it.

    As far as making your own, the recipes I've seen use chicken breasts to make the broth. But can't we also use meaty chicken bones as long as we've removed/rendered all visible fat?

    Example, I often buy whole chicken and cut up into pieces myself, saving the back for making chicken stock. When I made a batch a few days ago, I removed all the skin and fat that I could, then roasted the backs in a 450 oven. This browns the meat and bones which helps color and flavor the stock. More importantly, any remaining fat cooks out.

    After making the broth with the backs, I poured 4 cups into my gravy separator to check for fat content. Only the slightest film across the top. So to the HCG vets out there, do you think this version of broth would also be okay?
