This is one of my go-to recipes while in P2, especially when I am getting bored.
Preheat to 375
100 gm Cod
1 Orange
Thyme or rosemary
Splash of lemon juice
1/8 tsp orange zest
Salt and pepper to taste
Cut orange in half, juice one side, chop orange slices from other side. Put in a bowl and combine with lemon juice and thyme or rosemary and salt and pepper.
Put the cod in a baking dish and spoon over half of the sauce. Bake for 15 minutes
Spoon remaining sauce over the cod when it is done and enjoy. I like to put this over romaine lettuce.
Some variations I have used are adding a little mustard or balsamic vinegar or chopped plum tomatoes and onions and garlic.

Yes, this sounds delicious, will try this on my new batch of fish.
I usually use tilapia and do the garlic, tomato and lemon juice recipe.....but this sounds great for a change![]()
Very nice light flavor and super easy to prepare. I served with Baked Orzo With Butternut Squash and Mushrooms and it was a delicious dinner. Thanks for sharing!
