    Grammy's Mug Cake Recipe

    I came across Grammy's mug cake while perusing recipes here in the forums and thought I'd share. I remember making this last year and it was great! Feel free to add your favorite here as well.

    Mug Cake
    2 Tlbs. Almond flour
    1 1/2 T xylitol
    1 Tlbs. cocoa powder, heaping
    1 egg
    1 1/2 Tlbs. half and half or cream
    1 Tlbs. Butter or coconut oil
    Splash of Vanilla extract
    1 large coffee mug

    Mix all dry ingredients in mug, add egg and blend thoroughly. Add milk, oil and vanilla and mix. Place in 1000 watt microwave for 90 sec. Do not cover mug. Cake will rise. Let cool and place on plate. Add a little whipped cream to top

    I don't eat sweets much, but when I do I have no issues with pure cane sugar in P4. The only sweetener I have issues with is Maltitol, which gives me horrible digestive and bloating issues. My stomach is normally flat as a board, but after ingesting Maltitol it blows up like a balloon until the next day.

    Recently, I picked up a bag of non-GMO no corn based Erythritol at a good price, which I know I don't have issues with it since I chew a lot of gum that is sweetened with it.

    Is Erythritol interchangeable with Xylitol in recipes?

    I find that erythritol is a little less sweet per volume than xylitol, so you might need a bit more to get the same sweetness level.

    The best price I've found on cane-based erythritol is Anthony's brand.

    Anthony's is the brand I have. Since I don't eat many sweets, my palate is super-sensitive to things that are really sweet any way, so Erythritol may be perfect for me. I'll let you know. I will try it in my favorite mug cake (which is made with homemade mac nut butter), and let you know how I like it.

    What I have found works for me is to mix birch xylitol with the cane-based erythritol. I use a 1 cup to 3/4 C. blend. Combining them seems to cancel out the cooling effect they have alone and makes it taste more sugar-like to me. I also powder the mixture in a coffee grinder, as I find they blend and dissolve better that way.

    I'm like you in that I like most recipes less sweet than intended, so I end up using lesser amounts anyway.

    What brand do you use of xylitol? I don't have any cooling effect with mine and it tastes like pure cane sugar. I use Xylo Sweet usually but always choose one made from birch bark and not corn.

    I've mainly used Xyla (birch), but also other brands, including Xylo Sweet. Currently I'm using Health Garden. They all have that cooling effect for me. But as mentioned, blending the xylitol and Anthony's (non-corn) erythritol has fixed that problem for me. So I pretty much stick with that now, since I experience no cooling and no aftertaste with that mix.

    Sweetener taste perception is so individual.

    For instance, people rave about the THM stevia as having absolutely no aftertaste, but for me, its the worst brand of any I've tried. I get an aftertaste that lasts for up to 3 days. I can't get rid of it. It has to wear off. I can use the Trader Joe's stevia extract, but it's still has a short-term aftertaste.

    Monkfruit extract is even more horrible to me. That was an expensive experiment failure.

    I got some Bocha Sweet. I really love it--zero calories and perfectly like sugar. But horridly expensive. The best price I can find is about a dollar an OUNCE. I save it to dip fresh strawberries in.

    Wow, that is crazy expensive! I can't use stevia at all. It makes my blood sugar plummet which is so weird.

    Leez is right, sweeteners seem to be different for everyone's palate. The only Stevia brands that don't have an aftertaste for me is Sweetleaf Organic Powder, however their drops do have an unpleasant after taste. I use Now Foods brand flavored drops (Toffee, Lemon, Cinnamon, Coconut) or Plain and all taste great with absolutely no aftertaste to me at all.

    Beachy... I feel guilty saying "you're welcome" for the recipe since it was actually Grammy's but... you're welcome! lol


    I'm with all of you on the sweeteners. I'm constantly amazed at how different they can all taste; even if the same type of sweetener, the taste/aftertaste can vary so strongly with each brand. Yet, for some reason, I keep trying different ones!

    I like the Anthony's brand.
    I'm not a huge fan of stevia since almost all of them have an aftertaste to me. I've had this huge bag of "morning pep" birch xylitol in my kitchen for ages and so far, I like this one the best. Have any of you tried this one?
