    P2 meals, recipes, pics

    I'm starting round 3 this week and thought I'd kind of journal the food part here.
    Many times when we look for certain recipes here it can be a chore to find exactly what we're looking for so I thought I'd put all my favs in one spot.
    Please join in and add yours!!

    Tonight's supper was shrimp and P2 pesto over cabbage noodles, and 2 melba rounds. For dessert I had pink grapefruit sweetened with vanilla stevia.

    SHRIMP SCAMPI WITH PESTO AND CABBAGE NOODLES

    Slice cabbage into strips and cook in some broth or water until tender.
    Cook shrimp in a little broth with chopped garlic, add pesto , pour over cabbage noodles.

    P2 PESTO
    Chop fresh basil, garlic, salt, pepper or run thru food processor.
    Put in container and freeze then cut into blocks
    and put in freezer bags.

    Lunch today was buffalo chicken over italian slaw with mandarin oranges.

    BUFFALO CHICKEN
    Mix together -
    Hot sauce
    Dried onion
    Chives
    A little water
    Pour over chicken, sautee or bake.

    ITALIAN SLAW
    chop cabbage and marinate in Italian dressing overnight.

    ITALIAN SALAD DRESSING
    Vinegar
    Sweetener
    Oregano, parsley
    Hot pepper seeds
    Garlic powder
    A bit of water

    A chilly day so it's time for Chili Salad!

    CHILI
    100 grams lean ground beef
    ½ cup crushed tomatoes
    ½ cup tomato sauce
    ½ cup water
    Dried onion
    Pinch of garlic powder
    Pinch of onion powder
    Chili powder, paprika, hot pepper
    Salt and pepper to taste

    For Chili Salad, serve over a big pile of chopped romaine.
    I counted the tomato as a fruit, and the romaine as the veg.
    I mixed veggies a bit by adding a little chopped raw onion.

    I'm always over at the P3 food **** thread drooling! I've really enjoyed getting creative in P2 I try to make my food still look beautiful as well as tasty every time I eat, and would love to share!
    I only have a week left, but I will be back with pics later~

    Deni - Thanks for this. I usually cook things pretty simply, but this will be great when I start getting bored, especially toward the end. Keep it up please! Doubt I'll have much to add, as I'm not that creative, but if I do I will.

    Hi guys!

    Tonight was French onion/egg drop soup combo. Melba rounds and some grapefruit sections sweetened with vanilla stevia for dessert.

    French Onion/Egg Drop Soup

    1 whole egg plus 3 egg whites, lightly beaten
    1/2 onion, sliced
    2 cup chicken, beef, or veggie broth
    1 cup water
    salt, pepper
    In medium saucepan, bring liquid to a boil. Add all ingredients except egg and cook til onions are soft.
    Very slowly pour in the eggs and gently stir in a big circle with a fork til strings form.
    Top with chopped chives. You can also top with crumbled melba toast.
    This is also good with chicken instead of eggs.

    You all are very welcome!

    Over the past year I've seen so many posts by people saying they were bored with the limited menu or that they are sick of eating chicken every day.
    For me, even if the list of foods is tiny, there are simple ways to liven it up.
    And also, making big batches and freezing it really really helps! You can heat up chili in the micro, chop up some lettuce and ta da! You have a hot spicy crispy meal in a couple minutes. It makes this diet a pleasure!! : )

    I was going to make baked apples for my sisters when they come to dinner Sunday. Decided to make apple 'pie' instead.

    For each serving --
    1 apple
    1 tablespoon lemon juice
    1 tsp vanilla
    1 tsp ground cinnamon
    pinch of clove
    2 tbl water
    sweetener to taste
    Slice apple into very thin slices. Arrange in layers in a small baking dish.
    Mix rest of ingredients and pour on apples.
    Cover with alum foil, bake at 350 for 30 min or until apples are tender.
    Uncover and broil for a few minutes to brown top.

    This is 3 apples/servings.
