    Found a new recipe that looked interesting the other day, adjusted it to P2, and tried it tonight. Really good.
    These mix vegetables, but I don't mind doing that once in awhile.

    Naked Tacos
    · 500 grams ground beef (I mixed ground beef & ground turkey)
    · 1 tbl dried onion
    · 2 tbl taco seasoning mix
    · shredded lettuce
    · diced tomatoes
    · diced raw onion
    · sliced jalapenos
    · toppings – salsa, sour cream, guacamole, cheese

    Preheat oven to 400 degrees. Line large baking sheet with foil.
    Mix the ground beef, dried onion, and taco seasoning mix together in a bowl.
    Spread out onto baking sheet in an even layer about ¼” thick.
    Bake for 20 minutes, then take the pan out of the oven and drain off any grease.
    Cut into squares then cut in half into triangles. Top with lettuce, tomatoes, onions, jalapenos, and toppings.

    Today's yummy dinner. Pink Argentinian shrimp scampi, potatoes o'brien (made with radishes), and cucumber salad with homemade ginger dressing. Yes, I combined veggies but I don't have an issue with that occasionally.
    For some reason I can't post a pic today or I would!
    ETA It took 3 computers, 2 ISPs, 3 browsers, changing my password, and a lot of effort to finally be able to post a pic! But challenge accepted! : )

    I don't really measure so you'll have to adjust things to your liking.
    Mix together lemon juice and/or vinegar (I like to use a little of both but not too much), chives, parsley, sweetener (I use sugar free vanilla syrup), powdered ginger and grated fresh ginger, hot pepper flakes, salt, pepper. (for P3 I add a little olive oil)
    If I have time I heat this on the stove to really blend the flavors and thicken it, then cool it. But it's still tasty even if you just mix it together and use it immediately.
