    Special Curry Egg Salad- HCG friendly

    1 cup Trader Joes Riced Cauliflower I buy fresh but they also have it frozen at Trader Joes or you can make your own.
    Put is bowl and microwave 2.5 minutes
    2 green scallions chopped
    one hard boiled whole egg and a few egg whites. chop up a bit (some days I just use to whole eggs)
    1 heaping tsp of dijon mustard
    sprinkle curry powder on top and stir it all together. YUM! You will be hooked!
