P2 Blackened Chicken (spicey)

    I just made this today and I did not take a pic! Sorry But it was so good that I had to share! I got this seasoning mix from Guy Fieri. He uses this along with alfredo, but of course we cannot have noodles on P2. This makes plenty and you will have enough seasoning for prob 4 servings or so...just put in a small container in the fridge if you have leftovers

    1 tablespoon granulated garlic
    1 tablespoon freshly cracked black pepper
    1/2 tablespoon salt
    2 teaspoons ground cumin
    2 teaspoons granulated onion
    1 teaspoon cayenne pepper
    1 teaspoon Italian seasoning (I only used Oregano)
    1 teaspoon paprika
    1/2 teaspoon chili powder

    Ingredients and other:
    100g chicken
    Cast Iron skillet (don't add butter, oil, etc)

    Preheat the oven to 350 degrees F. Heat a large cast-iron skillet over high heat. Dredge the chicken breasts in the Blackening Spice Rub. Place in the cast-iron skillet. Blacken both sides of the chicken, 2 to 3 minutes per side. Put in the oven immediately for approx 10 minutes or until done.

    It was delicious! But spicey! Enjoy!

    I just made this, and I LOVE LOVE LOVE... super spicey and I LOVE IT. my veggie was tomatoes and it was very refreshing. thank you
