  3. CHOCOLATE MUG CAKE!!
    After all the raves about Mug Cake (& my DH LOVING one for breakfast - he's not even on the diet!) I decided to have a bit of fun

    1/4 cup milled flax
    1/8 tsp. salt
    1/2 tsp. Baking Pdr
    1 heaping Tbsp. cocoa
    7 grams of Enjoy life choc chips
    2 Tbsp. chopped walnuts
    1 1/2 Tbsp. Xylitol
    1/2 tsp. vanilla
    1 egg
    1 tsp. butter
    I mixed the dry stuff first, then added the wet, and zapped it for 2 mins in the microwave
    Ganash-
    2 oz. half n half
    2 Tbsp. Agave
    1 tsp. butter
    1/2 tsp vanilla
    dash of salt -heat 'til steaming hot
    add
    2 blocks of 100% cacao by Ghirardelli chocolate

    The chocolate should melt on it's own after sitting in the hot cream, it will be lumpy at first, if the chocolate seizes up, just add a touch more cream or agave, it should smooth out and become shiny. Pour over the cake.. Voila! P3 DESSERT!!

    Oh, btw, I made a dutch baby yesterday! I think I have some revisions to do to it before posting it. Of course I don't think it will ever be just like a real dutch baby but it was pretty yummy. The consistency was heavier as I suspected it would be. The taste reminded me of somewhere between shortcake and poundcake. I used a 1/2 cup of the coconut flour and it made a 12" size "dutchbaby". I topped it with whipping cream and berries and ate the whole thing in one sitting! Oh my gosh that was way too much for one person! I won't do that again. Depending on the amount of berries and cream and if I'm eating any eggs with it, I'd either halve it or quarter it and refrigerate the rest for another day. It would also make a great dessert instead of breakfast. Watch for it soon!

    I am new to this and I'm really not a cook at all although I think I've come up with some pretty good stuff.
    I don't think you should use bean flour on P3 because beans are a starch and you aren't supposed to have any starch on P3.
    I personally have never used it and have never noticed it in the store.

    I buy my almond flour blanched already. I used to think it was expensive until I realized that it really is simply ground almonds. And, we all know how expensive nuts are. I use Bob's Redmill brand because I can get it very conveniently without having to order online. One of these days I may try another brand and a large bag of it at that. Some of the recipes that I have looked at call for an awful lot of it and I can't see dipping into my teeny tiny little bag of Bob's and using it all up lol!

    Yes, I looooove dutch babies! Haven't tried to make them P3 friendly yet. I don't think they would work out with the almond flour. I haven't opened my coconut flour yet so maybe it is more "light". I just might have to try it out really soon!

Hi everyone,
It's been a few days... I was going to go a few more days on P2... but mentally with all that is going on in my life right now, I just couldn't do it.. Day 22.. Still lost 1.6!!

I can't believe I am down 1.6 this morning!!! After it going slow slowly the past week, I didn't expect much.. But a 1.6 is HUGE!!! YAY FOR ME!!!

Anyhoo.. off to bake the breads this morning... Have a great day all!!

Lost again!!!!!

It's happened again! The scale went down!! I got up this morning nearly running to the scale.. I was rewarded for my good behavior (NO B.L.T.'s at work!) I am down another pound!! That brings my loss up to almost 18 lbs!! I am sooo thrilled about this! I think back on how much money I wasted on Weight Watchers meetings only to lose a max of 10lbs. ever... 48$ a month!! UGH! I never thought I would have the courage to stick to such a strict diet. Doing this has given me so much joy and confidence!

YAY!!!!! I'm a LOSER!!!!!

Phew!!! I overcame the pound I gained from that evil Chocolate Chip Cookie!!!! I was SO good yesterday.. And honestly, I prayed to God all day for the strength to continue on and overcome the mental cravings. I got on the scale this morning and..... drum roll....... I LOST!!! 1.8 lbs!! I was so excited... I even lost more than the 1.0lb. gain I had yesterday! How wonderful!! I don't feel like I lost time screwing up now!!

But today, I have to go into work, and make glorious food

I CHEATED!!!!! and gained.......UGH!

Well, after cheating yesterday, it's no big surprise that I gained... 1.0!! Ouch... I hope I don't completely stall now.. It's funny though, of all the weight I have lost, the majority of it, was during the first week! I lost about 11lbs in my first week, and only 6 in the last two! That is a huge bummer.. I was really strict too! I didn't cheat AT ALL in those last two weeks. I didn't eat the Grissini or the Melba toast either, I was super concerned the carbs would affect me negatively. I know
