Starting P2 tomorrow and still confused about vegetables

Hi everyone. I'm new here and to the diet, so I apologize if this question is redundant.

I am still pretty confused about how to properly utilize the vegetables with each meal so that they stay in the 500 daily caloric range.
I would also like to mix vegetables if possible. If I were to, say, have a chicken and hamburger patty day with a medium-sized orange and apple for the fruits, would I just then use the calories left over to make up my vegetables if I wanted to have a
